Honey color, sugar content and taste changes with each season, as the nectar sources are ever changing.
Trees and spring flowers offer some light, floral, and sometimes minty honey. If you are lucky you can taste some of the early spring floral notes.
Spring is light and delicate in taste and color with a heavy pop of sweetness!
Summer can be light or on the darker side, depending on when it was harvested and what flowers the bees were foraging, sometimes it is as sweet as spring, and other times it’s an excellent light combination of a burst of summer in your mouth. The kids tend to prefer the summer over fall. Summer honey is an excellent sweetener for your beverages.
Wildflower - Late Summer - What every happens t be around after summer has bloomed and fall is waiting in the wings. This honey starts to have more flavor and richness, vs the sweetness of summer.
Goldenrod is luck of the draw. Sometimes the bees make it and sometimes they don’t. A lot depends on the weather. It is a golden color and subtly, rich. Sometimes you can pickup a spice undertone. This flavor profile falls between summer and fall and tends to crystalize quickly.
Fall honey tends to be more flavorful and darker. It is full of the Autumn flowers like goldenrod, aster, and Japanese knotweed. Fall honey can be extracted mid-September through October.
I cannot guarantee which state your honey will be in, liquid or semi-crystallized or totally crystallized. However, this only assures you are getting RAW honey. The best kind with health benefits.
